Lemon Chicken Crack is a creamy delicious meal, not so much on the healthier side of the recipe spectrum, but man-o-man is it tasty.
After some recipe research and trying the popular “chicken crack” through a friend an idea was born. A combination of two ideas resulted in a citrusy twist to an easy crockpot favorite.
It can be served on bread like a sandwich, on rice, or with sides, whatever your heart desires. I choose a few on hand sides free of my food allergens. I hope you enjoy it!
Ingredients
- 1 1/2-2 lbs Chicken Breast
- 8 oz Cream Cheese, cut to cubes
- 5 oz Artichoke Hearts, chopped or minced
- 1 Lemon, juice and zest
- 1 tbsp fresh Thyme
- 1/2 pkg Ranch seasoning
- 1/2 tsp Sea Salt
- 1/2 tsp fresh ground black pepper
Directions
- In a crockpot, place all of the ingredients.
- Put crockpot on high for appx 4 hrs.
- Check in and stir the cream cheese and surrounding juices to keep it mixing well throughout cook.
- When the chicken is done and easily shreds apart it ready. Enjoy! Yep, it’s that easy.
