Need a side that goes with everything? You can never go wrong with potatoes, especially these deliciously citrus roasted red ones.
Ingredients
- 3-4 Red Potatoes, chopped
- 1/2-1 tbsp Olive Oil
- 1 Lemon, Juice
- 1/2 tsp Sea Salt
- 1/2 tsp Cracked Black Pepper
- 1/2 tsp Herbs de Provence
- 1 tsp creole seasoning
Directions
Preheat Oven to 375 degrees.
- Line potatoes in bottom of baking dish.
- Drizzle with olive oil, lemon juice, and seasonings.
- Toss potatoes to cover with ingredients.
- Bake for 30-45 min. Or until lightly browned on top.
- Option: sauté in large skillet instead of baking.
