Breaky Sandwich

Army Sandwich for the win!  Breakfast is the most important meal of the day…or so THEY say.  All I know is I love me some breakfast foods and it doesn’t have to be morning. As a matter of fact I made this for myself for dinner last night. It’s very simple and anyone who cooks on a regular basis needs no instructions on something like this.  however, it might spark an idea or just bring you back to basics. Ingredients

  • Fresh Buttery Croissant
  • Sharp Cheddar Cheese (Shredded is better but slides will do.)
  • 1-2 Eggs, Organic Brown Cage Free
  • Pancetta (Sub Bacon, Turkey Bacon, or your preference.)
  • Sea Salt
  • Optional: Avocado, tomatoes, Hashbrowns, etc

*Naturally the more fresh and quality the ingredients the better taste you’ll always get. Ex. Get tomatoes on the vine, etc.


Cooking Instructions

  1. Heat skillet to Medium heat for Pancetta
  2. Prep Cheese as desired for easy melting from heat of eggs and bread. Also prep bread by slicing in half sideways. I prefer to leave one side attached to open croissant, but stay together.
  3. Brown both sides of the Pancetta, make enough for a few slices on each sandwich and a few in the side if desired. Set aside to cool.
  4. Place sliced croissant open face down on skillet to heat. Heat back for a moment, then set aside.
  5. Cook egg in “over medium” style., salt as desired. (1-2 per sandwich depending on bread size.)
  6. Place egg(s) on bread, place cheese on top followed by the pancetta. Place on skillet and press slightly for a second, if desired.
  7. Cut sandwich in half and enjoy!
