Savory Twice-Cooked Home Fries

Savory Twice-Cooked Home Fries…mmmm.

Okay…so these are seriously amazazing! So much so that they require that extra syllable. I’m providing an in depth recipe for the flavor profile I made this evening which includes Herb de Provence. However, this dish could be altered to follow the main steps for cooking, but change up the spices for various meal styles. I’ve notated below which items to keep and which can be altered for different tastes.


Ingredients

  • 6+ Red Potatoes (peeled and cubed)
  • 1/2 tsp Sea salt
  • 1/2-1 tsp Lawry’s Seasoned Salt (or just more sea salt)
  • 1/2 tsp Fresh cracked black pepper
  • 1/2-1 tsp Herbs de Provence
  • 1/2-1 tsp Garlic powder
  • 1-2 tbsp Olive oil (evo)
  • 1/2 lemon, Lemon juice, fresh squeezed
  • Appx 2 c Water
  • Coconut oil spray (or similar for nonstick purposes)

Pro Tip:  As noted above you can replace the Herbs de Provence and garlic powder for different spices depending on the flavor and type of meal your serving. The other items, even the little bit of lemon juice should remain the same for nearly any type of meal.


Directions

  1. Preheat oven to 400 degrees F.
  2. Place potatoes, water, and a little sea salt in skillet. Be sure the water covers the potatoes as they line the pan in one layer with a little room.
  3. Bring potatoes to a boil and do so until they have softened to a fork test, but still firm. Watch to not overcook as you will also be roasting them!
  4. Then potatoes are done, turn off the heat, drain the water and return potatoes to skillet.
  5. In skillet add a top and use some oven mitts to hold the top and skillet and gently shake em up. Yes, shake the potatoes inside the covered skillet till they get some fluffy texture. Be careful not to do this too much, especially if you accidentally over boil them. We want some texture, but not for them to break apart.
  6. Uncover skillet and add evo and spices. Cover and gently shake them up again or carefully stir to mix spices on the potatoes.
  7. Place potatoes on greased pan and give them room.  Bake at 400 degrees F for appx 10-12min.
  8. Turn the cubes to brown another side and bake for another 5 min then remove from oven.
  9. Sprinkle lemon juice on still hot potatoes, mix gently and serve. Yum!!!
