Hello!  I’m, Alisa Collard, the Den Mother of this virtual house and Chef in the making at The Culinary Institute of America.

In 2017 I found out that I have a condition called Eosinophilic Esophagitis (EoE).  As part of this condition I am allergic to all of the things, More specifically; food.  Okay, Not EVERYTHING, but enough that it’s life changing.

I’m definitely not the first person that has had to change their way of life after a medical diagnosis, and I certainly won’t be the last.  As such, I’ve decided to focus this site on my health and culinary journey.  The trials and errors I’ve been making while stumbling through the good, bad, and ugly symptoms associated with the condition could be helpful to someone else.  My hopes in sharing what I learn Is that others can avoid some missteps I make, and likewise benefit from the positive discoveries.  Input and requests on subjects and recipes to conquer are welcome!

Here are a few resources For those interested in more information regarding EoE;

Symptoms of this emerging auto-immune disease;

  • Heartburn
  • Vomiting often occurring with meals
  • Difficulty swallowing (dysphagia)
  • Pain or discomfort with swallowing (odynophagia)
  • Food becoming lodged within the esophagus (food impaction)
  • Refusal to eat
  • Poor weight gain (failure to thrive)

If you are experiencing any of these symptoms, even if you have already been diagnosed with GERD or Acid Reflux, find a Gastroenterologist and Allergist or appropriate local medical professional to get help.
