Fancy Grilled Cheese

Fancy Grilled Cheese is sure to please.  As adults our taste buds can change and expand which can be a delightful experience, but also more time consuming and expensive. Lol

Chef’s find inspiration everywhere and Revamping kid classics can be fun.  However, in their zeal to be the new hot thing, sometimes they get creative and go too far.  Example – Grilled Cheese is an all time kiddie fav. As an adult I’ve found places that tried to reinvent the grilled cheese, but went kind of crazy like putting grilled onions, pears, and a plum sauce making it less grilled cheese and more something else entirely.  I’ve tried to find a balance of the good ole days and still appeal to the more refined tastes of my matured pallet.  Enjoy!


Ingredients

  • Sourdough Bread (Austinites: East Tiger or 6th Street Bakery, even fresh HEB)
  • Soy free Earth Balance (or butter), softened
  • 2 types of sharp cheese, sliced (ex. Sharp or extra sharp cheddar and a sharp white cheese)
  • Tomatoes, sliced into rounds and lightly salted
  • Sea Salt

*Naturally the more fresh and quality the ingredients the better taste you’ll always get. Ex. Get tomatoes on the vine, etc.


Directions

  1. Heat skillet
  2. Butter outside parts of the sourdough bread (or heat butter in skillet)
  3. Lay one side of bread in skillet butter side down, top with one type of cheese covering bread, cover with sliced tomatoes, cover with second type of cheese and other side of the bread. Let bread brown and keep and eye on it.
  4. When ready flip sandwich to brown the other side. If it wasn’t buttered before hand take sandwich off skillet for a moment to melt more earth balance or butter on skillet then put sandwich back on side that needs to be cooked. Brown until ready for your taste.
  5. Let cool and enjoy!
