Sweet Greens Salad – a tasty side or base for to reignite or start a love for greens. Organic or good quality ingredients make a difference.
This salad has even been a huge hit at office potlucks, since when did a salad get talked about at a potluck? YUM
This salad is great as a side or a main dish with endless possibilities. It’s sweet and tasty! Enjoy!!
Dressing
Ingredients
- 1 c Grapeseed or Coconut Oil
- 1 c Agave Nectar (Blue Agave)
- 1/2 c Balsamic Vinegar
- 3 tsp Coconut Aminos (or Bragg’s Liquid Aminos or Soy sauce)
- Salt and Pepper – optional
Directions
- Mix all ingredients together and shake or stir together before use.
Salad
Ingredients
- Organic Spring Mix (or Fresh Green Lettuce, Red Lettuce, and Spinach)
- 2 TBSP Butter or Coconut Oil
- 1/2 pkg Dried Cranberries
- 1/2 c raw Almonds pieces (or whole then chopped)
- 1 c Broccoli florets, bite sized
- 1/2 c Strawberries, chopped*
- 1/2 c Clementines, chopped*
*Optional – may be substituted for something else. Ex. I didn’t have strawberries or clementines and used Mango one night!
Directions
- In skillet melt 2 TBSP butter or use coconut oil and brown Almonds.
- Set aside on paper towel until ready to mix in salad to serve.
- Mix all items together in a large bowl. Best when mixing salad with dressing all together just before serving. But if you made a lot and want leftovers mix items as plating food.
