Salmon Croquettes (Salmon Patties)

Salmon Croquettes (Salmon Patties) – not your typical dinner, but full of flavor and will have everyone going back for seconds.


Ingredients

  • 1 can (15 oz) Sockeye Red Salmon (or equivalent fresh)
  • 1/4-1/2 c Vegetable/Canola Oil
  • 1 tsp Coconut Aminos (or Soy or Worcestershire Sauce)
  • 3/4-1 c Breadcrumbs or Panko (1/2 c Inside Patties, 1/4-1/2 c Outside Coating) *Homemade allergen friendly breadcrumb recipe below.
  • 1/4 c Flour (Gluten-free measure for measure flour works great.)
  • 1/4 *Green Bell Pepper, minced
  • 1/4 Onion, minced
  • 2-3 Garlic cloves, minced or pressed
  • 2 TBSP Thick Chia Gel (or 1 Egg)
  • 1 tsp Garlic Powder
  • 1 tsp Onion Powder
  • 1 tsp *Paprika
  • 1/2 tsp Cracked Black Pepper
  • 1 tsp Sea Salt
  • Optional: 1/4-1/2 tsp Jalapeño/Green Sauce (to add heat)
  • *Alternative Flavor: Replace Green Bell Pepper with marinated Artichoke Hearts, minced or chopped in a food processor
  • *Alternative Flavor: Replace Paprika with Italian Seasoning and/or Dill

Optional serving sauce

  • 1/2 c Sour Cream
  • Juice of 1/2-1 Lemon
  • 2 sprigs of fresh Dill, minced
  • salt to taste

Directions

  1. In a large Skillet heat some oil on medium heat and add the minced onion. Stir well until translucent.
  2. Add garlic and bell peppers to skillet and mix well (if making artichoke version just add the garlic), heating and stirring for about 1-2 minutes, then remove from the heat.
  3. In a medium/large bowl or a food processor, mix all of the ingredients except 1/4-1/2 c of the breadcrumbs and the cooking oil. (It is not necessary to remove the bones or skin from canned Salmon, the elements get cooked down. If using fresh Salmon, remove the skin that may be too tough.)
  4. Form patties (will make about 6-7) and coat outside with remaining breadcrumbs/Panko.
  5. In Large skillet bring cooking oil to medium heat and add the salmon patties, fry for about 6 minutes or until sufficiently browned. Don’t crowd them, but in a large skillet you should may be able to fit them all in one round.
  6. Flip the patties and fry for another 3-6 minutes until golden brown all around.
  7. Remove patties from the skillet to a paper towel lined plate to help absorb any extra oil. Serve immediately with Citrus Dill sauce, if desired. Dish goes great with Garlic Red Mashed Potatoes, YUM!

Breadcrumb Directions

  1. Use a Mortar Grinder or dry blade blender/food processor.

yields appx 3/4-1 cup breadcrumbs.


Alternative warning: Ian’s Gluten-Free Panko is seemingly allergen friendly, but contains a derivative of corn not advertised on the packaging. If you are not allergic to corn, they are a good Panko substitute, but if you are allergic to Corn - do NOT use them.
